Daubers Delight !
This is one of my favorite snacks to keep by my computer whilst playing bingo ! crunch munch daub. We all love popcorn… but this is popcorn with a healthy twist.. You can make up a batch of this delightful .. filling… crunchy & scrumptious bingo-time snack. Store in airtight containers so you always have a supply at hand.. beware the closer you get to shouting bingo the more you will munch these delights !
8 cups Popcorn
1/2 c Salted pumpkin seeds
1/2 c Dried cranberries or raisins
1/2 c Banana chips; broken into Pieces
1 1/2 c Sugar
1/2 c Corn syrup
1/4 c Water
1/4 c Butter
1 ts Vanilla
Take the first 4 ingredients and place in a large bowl. Set this aside for use later. Now take a medium sized saucepan add the sugar, corn syrup and the water, cover the pan and let cook for about 3 - minutes.. then uncover the pan and let the mixture cook until it reaches the "hard-ball" stage this should take approximately 4-5 minutes… keep a close eye on the mixture… sugar syrups have a habit of burning in the blink of an eye.. don't stir the mixture whilst it is cooking !. Once you notice the change in the texture of the syrup quickly add the butter and vanilla.. now cook for a further 1 minute. Pour the syrup mixture over the popcorn mixture that your prepared earlier… mix rapidly so that all the popcorn gets coated.
Your Dauber's Delights are almost ready… grease a baking sheet and turn the popcorn mixture out into it.. use either a metal spoon or buttered hands ( beware mixture can be very very hot ! ) to press the mixture into the sheet.
Put the baking sheet aside or if your prefer a quicker result place the sheet in the refrigerator
When thoroughly cooled break into bite-size pieces and ENJOY!!
